I have a problem
A really big problem. Ask Rachel. She laughed at me today. "You and your goat cheese," she said. I know. I had eaten it in restaurants, but until about a year ago, I had never purchased it. Now I am utterly addicted. I made a quiche with spinach sauteed with a little garlic and goat cheese. It was yummy.
I almost bought a ready-made crust and then I read the ingredients. Ick. Fully hydrogenated lard. Partially hydrogenated lard. And lard. All three on the list. I had no idea there were so many types of lard. Crisco isn't much better which is what I always use for a crust, but oh well.
And also I have a frugal cooking tip for you. If you can catch your bread at stale, maybe even just beginning to mold but before it begins to resemble a 7th grade science experiment, you can cut off the tiny bit of mold and chunk it up. Toss it in a drizzle of olive oil and a sprinkling of seasoning salt (or sea salt and pepper or ranch seasoning or parmesan cheese) and toast in the oven to make very tasty homemade croutons.

I love making crutons but we never wind up keeping bread long enough to be stale. Maybe I just need to buy/make more bread so I have an excuse to make crutons hehe. :)

Oh, I love goat cheese too- I started eating it because it was easy to get locally, and now I just love it. Some favorite ways to eat it: smeared on an apple slice, topped with walnuts and honey, and in a beet and green bean salad with hazelnuts and raspberry vinegarette. Yum, yum.

That quiche looks yummy and I'm not even one for spinach....I guess if you add enough eggs and cheese to it--anything is delicious isn't it?!

Making things yourself is so much better than buying shop bought! (although I do admit that I buy ready made puff pastry, just because I don't have the patience to do all that folding and waiting and folding). I really want some goats cheese now hmmm...

Actually lard is not bad for you. It is about 40% monounsaturated fatty acids, like olive oil. It should be organic and kept in the fridge, not the preserved stuff from the grocery store.

Have you tried the Spectrum shortening? It works GREAT for pie crusts, and um, you do know how I feel about pie, right?

oh lard is so much better for you than crisco! But you are right that most store-bought lard is really icky. But good lard from happy pigs is better than butter and makes the most amazing crust. You'll never go back.
