this is our granola bar

Back when Stephanie posted her recipe on her old blog, we'd eaten plenty of granola but had never made our own. As soon as I printed out her recipe and made my first batch, we were hooked. Now I make it almost weekly. Granola is made of whole, real food. It's filling and more nutritious than breakfast cereal.

My kids like it with a healthy scoop of yogurt. I like it with a few pumpkin seeds, some dried cranberries, finely chopped apple, and milk. It's also just good by the handful on the way through the kitchen. It's so yummy right-out-of-the-oven warm, when the house is still filled with that tempting granola aroma.

Here is my version. I've typed it up dozens of times for friends- at least this way there will be a quick way to find it. Really, it's so easy, after the first few times you make it, you'll no longer need to look at the recipe.

Easy Granola (adapted from a recipe by Stephanie Congdon Barnes):

7 cups rolled oats (not quick oats)
2 cups add-ins (seeds, nuts*, flax, dried fruit**, coconut, etc.) I always just use 1 heaping c. roasted sunflower seeds and 2/3 c. milled flax seeds.
3/4 cup maple syrup*** or honey or a combo (I use half of each)
1/2 cup canola oil
1 tsp vanilla
1 tsp cinnamon
a pinch or two of salt

Stir together oats and add-ins (not dried fruit) in a large pan with sides (I use a roasting pan).

Heat oil, maple syrup, honey, canola, vanilla, cinnamon, and salt for a bit and stir. (I always use the microwave for 45 seconds or so. You just need to loosen up the syrup/honey and dissolve the salt.) You can also add some peanut butter here, but I don't. Pour over oat mixture and stir to coat evenly.

Bake for 30 minutes at 350º F stirring every 10 minutes. Add dried fruit after cool. I keep small containers of add-ins (pumpkin seeds, dried cranberries, chopped almonds) on the counter near the granola so everyone can dress theirs as they please.

*to keep your granola headache friendly, use seeds NOT nuts or peanut butter.

**In regards to headache friendliness, watch out for dried fruit. Sulfites are often used in the drying process. I emailed Ocean Spray and they wrote me back that their classic dried cranberries are fine but that their other dried fruits do contain sulfites.

***Use real maple syrup if you can. Imitation maple syrup is just high-fructose corn syrup and artificial flavor and who needs that? Nobody.

the weekend

Back in early January some very special friends came to town for a visit. It was the weekend of Heather's book signing. I knew we would all get along just fine, and we did. It was a most wonderful way to start the new year.

I've known these women for several years- through their websites and their photos, the beautiful things they create, the inspiring projects they work on- but we had never met in person. So many times during the weekend we would be talking or eating, or looking at artwork, or taking photos of each other taking photos, and we would burst with laughter, tears in our eyes, like old friends, old friends who have known each other for years. Because, really, we are. And we have.

We lounged around. We ate Rachel's stew. We thrifted. We talked art, architecture, families, cameras. We went out to eat. We went to the opening and were thrilled for Heather and Rachel to sign our books. We meandered at the Nelson. We hugged and said goodbye and had tears in our eyes again.

I was afraid going into the weekend that it would pass too quickly (and of course it did) but I was also keenly aware the entire time just how wonderful it was that we were really together and that I was having a great time.

I had to type this up before I get back to writing about what I'm working on or things my family has been up to. I wanted this for my own memory and also as a thank-you card to these ladies. Thank you, Martha. Thank you, Erin. Thank you, Emily. Thank you for making this happen. I am lucky to count you as friends, and I can't wait to see you all again!

I heart film. In addition to the Canon Rebel 2000 I have been using for awhile, I have two (newish-to-me) cameras, a Pentax k1000 and my mom's old Fujica st605. I love them both- particularly that satisfying little clunk they make when snapping a photo.

Good morning! How have you been? It's a cold and sunny day here, but the I've heard rumor of 50 degrees for the weekend. My fabric waits patiently. I've been working on a quilt but had to take my sewing machine in for repair, thank goodness, while still under warranty.

I think I'm ready to come back here once in awhile. I've written some ideas for posts into my little notebook, and hopefully I'm not too rusty to peck them out. I've been feeling pretty good this month (I fully admit I am usually Mean and Crabby in February). The key has been to keep busy. Busy with visitors, birthdays, parties, school events and more.

I'll be back soon with some details about some very special visitors. I feel like I can't talk about anything else until I get to that.
